Eric Bishop consults with clients, oversees class action settlement administration strategies and leads Rust’s labor and employment practice area. With his focus on labor and employment, Bishop’s team has been responsible for administering over 750 cases with innovative approaches and exacting security. Rust’s labor and employment practice area consists of over 50 employees whose duties include day-to-day client interaction and project management, technical support, claims processing, distribution, call center, quality control and general supervision.
Prior to joining Rust in 2006, Bishop was the accounting manager for Cargill Dry Corn Ingredients, a division of Cargill, Inc. Bishop oversaw the entire accounting function for the Dry Corn Ingredients division. His responsibilities included budgeting, forecasting, month-end and year-end accounting, financial analysis, cost accounting, project management, capital investments and general supervision of the accounting department. Bishop was also on the business management team and contributed to the creation and implementation of the business strategy.
Bishop, his wife and their three children reside in Shakopee, Minnesota.
